Ingredients

Scale
  • 4 ounces white baking chocolate
  • 2 1/2 cups cake flour
  • 1 1/2 sticks unsalted butter, softened
  • 1 1/2 cups white sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 Tablespoon instant espresso or coffee
  • 1 1/3 cup milk
  • 12 oz. white chocolate (for ganache)
  • 6 oz. heavy cream
  • 2 sticks unsalted butter (for frosting)
  • 16 oz. cream cheese, softened
  • Powdered sugar to taste

Instructions

  1. Preheat your oven to 325°F (163°C). Grease and flour three 8-inch round cake pans.
  2. In a saucepan, heat milk until warm (not boiling). Add chopped white chocolate and stir until melted; let cool.
  3. In one bowl, whisk together flour, baking powder, and salt. In another bowl, cream softened butter and sugar until fluffy.
  4. Add eggs one at a time, then mix in vanilla extract. Gradually combine wet and dry ingredients while alternating with the cooled milk mixture.
  5. Pour batter into prepared pans and bake for about 22-25 minutes or until a toothpick comes out clean. Allow to cool before decorating.
  6. For ganache: Heat cream until steaming, pour over chopped white chocolate, and stir until smooth.
  7. Frost layers with the ganache and top with additional frosting if desired.
